Chojiya is a long-established tororo soup restaurant founded in 1596, located in the former Tokaido post town of Mariko in Shizuoka City. For over 400 years, it has dedicated itself exclusively to serving natural yam tororo soup. The historic thatched-roof building, famously depicted in Utagawa Hiroshige's woodblock prints, serves as a recognizable landmark.

The tororo, carefully grated mountain yam in a mortar, is rich and creamy with a strong binding quality. Served in a dashi broth made with white miso and generously poured over barley rice, it offers a simple yet deeply layered flavor that spreads across the palate.
