Kourantei is a long-established Chinese restaurant founded in 1934, famous for its signature dish Tai Pien (太平燕), a Kumamoto specialty. This healthy and delicate noodle soup features springy rice vermicelli generously topped with seafood and vegetables.
Tai Pien originates from Fujian cuisine but has evolved uniquely in Kumamoto. It's characteristically topped with a fried egg that dissolves into the broth, adding a rich creaminess. Lighter than ramen, it's especially popular among women.
